Urtatim here: I goofed - the succulent aloe, such as aloe vera, is actually from South Africa... And was still unknown in early and medieval times.
Our bacon is sweetened and smoked, lardon is not. So modern American bacon is quite different from what they used.
Hi: It's Urtatim. You mentioned me :-) In many SCA cooking lists people had been speculating on substitutions, based largely on our modern assumptions. I found a recipe that made suggestions for substitutions if the cook is lacking several different ingredients. So i sent the recipe to many SCA cooking lists with the suggested substitutions removed and asked if people could figure out what the substitutions were. Many e-mail lists, many cooking Laurels among the listees. And people really couldn't figure them out.

One question I got at the end was on how the Franks preserved all the eggs they got as rents. My best quess was that they kept them in cellars under straw. In fact, that is not far from what Charles Estienne suggests in his sixteenth century work La Maison Rusqique, which is to set them on straw or bran and cover them, and to keep them in the cellar. It turns out in fact that even today not all Europeans refrigerate their eggs.
"pot holes" should be "post holes". :( Slowing of phrases is technical glitch, not me :). Game "at all levels of society" - though really it was mainly the upper classes that hunted. "Carp" is the remaining fish, distorted by the sound here. Not available in this era. Millet and panic, which did not leaven well, were probably intended for gruel during Lent.

Excellent presentation! I've been homebrewing and microbrewing for over 30 years. In particular, I like making Belgian and German style weizenbiers, Lambics, and such. Love those phenolic flavors from some of the German yeasts that I've played with. Thank you so much!
