Canning hot peppers. We canned peppers 5 different ways to see which one would be the best as far as taste, crunch, not poisoning us. None of peppers ending up beings crisp, but we had some delicious soft ones. We both enjoyed the peppers and still do. I should have added some pictures of the peppers two years later. The peppers that we did not water bath are brown. Not the way to go.

    In my mind I really think you did a good job of keeping track of what you did to each jar of peppers. Double documenting the jar and then in your journal. Could you post a image of the recipe or take a screen shot of the journal for the rest of us? Also one last thing please turn down the TV it was really hard to hear the lady over it.

    thanks for doing this LONG experiment. I do several experiments a year and can't imagine remembering to follow up after 2 years. Do you still feel like this is the best pepper recipe?

      I do feel this was a good experiment. I would try canning them next time canning for 30 minutes with temperature being 180 -185 degrees farenheit. I think they would be crisper.

      I’m having the same issue. I started growing pepperoncini because I wanted some of those pizza peppers I love. My Italian pepperoncini have not had the heat I want, too mild. when canning them, with a slit, a very short visit to boiling brine and then into the can with hot brine (no bath) my peppers are not snappy like those you get. They aren’t mushy, just soft.

      Pepperoncini are not hot peppers. you need to grow a hot pepper variety if you want hot. Another option plant your pepperoncini next to a Jalapeno pepper. As far as crisp, adding pickle crisp, salt brine and the low temperature water bath canning method should work. Water bath canning temperature should be between 180 and 185 degree fahrenheit for 30 minutes

    im going to plant 3 to 5 in a #100 smart pot 36" in. across. Blueberries are really tuff considering you meet their needs. I really wanted to see you feed the fish.

    Total failure in the garden, not even tomatoes. I had used wood chips that I received from the county. We live in a rural area and the trees could have been a combination of pine, hazelnut, Oak and what ever else grows in South Central Mo. I think that killed everything but the weeds. In 2019 I did not have the heart to start a garden nor the energy after working 50 hours a week.

    Nice video you're got there. I lived in Northern California in 1984, out side of Sacramento. The best thing about being there was Jimboy's tacos. Excellent job. I've figured out how to make em too. Had to do some hunting for the seasoning for the ground beef, but I found one that's extremely close to theirs.

      ​@@denisebellanich7938 Jimboy's Tacos are made with ground beef, 1 tbsp olive oil, 3/4 cup of water, lettuce, shredded mexican cheese blend (shredded Sharp cheese is just as good, that's what I use), 1 tbsp chili powder, 2 tsp's of onion powder, 1 tsp each of cumin, garlic powder, paprika, oregano, and brown sugar, 1/2 tsp of salt. Shred the lettuce. I cook 1 lb of lean ground beef in the tbsp of olive oil. Once it starts to brown I pour in the mixture of chili powder, onion powder, cumin, garlic powder, paprika, oregano, brown sugar, and salt, and mix it all together. Let it cook a little more and then I pour in the water and mix it some more. Next comes preparing the corn tortillas. Instead of using taco shells, Jimboy's use the flat, round corn (yellow) tortilla. The tortilla is fried in oil on both sides on a griddle (I use a flat round shallow frying pan). after you flip the tortilla over, to fry the 2nd side, you add some of the ground beef and some shredded cheese onto the middle of the tortilla. Then I flip over from one side over to the other to form a standard taco shape. Then I take it off the pan and sprinkle it with grated cheese. The last step is to top it with the lettuce. This is what makes up a Jimboy's taco, but I also add, before the lettuce, sour cream, and sometimes, black olives and diced tomatoes, but honestly, it taste way more like Jimboy's without the sour cream, tomatoes, or black olives.
