The Pumpkin Sausage Soup is the bomb! I make it a couple of times every Fall/Winter. So darned good and everyone loves it. I make it with plain green peppers, or half poblano peppers. No jalapeños as my son does not like spicy stuff, if he is eating it. If it is just hubby and I I add the jalapeños. Instead I sub them with Fresnos OR omit the Chiles. I make it in my Instant Pot and it works well for that. I make the keto chow and put it over the top, I don’t mix it in so I don’t get the burn notice while it is cooking.

Sarah, I didn't know that you were responsible for making the darling containers of cheesecake. Thank you for sharing the recipe and the video of the "how to". I was lucky enough to enjoy one and so happy I did. They looked so professional that I thought someone who might not have had the time to make a dish picked them up at a local store!! This was a perfect amount (actually very generous portion) and very delicious!! Great minds! Last week I meal prepped enchiladas too 😋 Like you...scratch sauce is BEST, the only difference is I'll make a gallon of it at a time & simmer that sauce down all day like italian gravy. I love batch cooking lots of proteins. I have not boiled chicken for a while, need to do it again sometime.

I made shredded chicken in my Instant Pot the other day. I cooked 7 boneless skinless chicken thighs in 15 minutes, with a natural release. Worked like a charm. They basically fell apart. I served them with guacamole and salsa and some rice. It was a huge hit and took minutes. I seasoned it beforehand with some Mexican seasoning I had leftover from a giant jar from Costco. A brand I had never seen before and it worked like a gem. A great use for it.

We are definitely coffee people around here. Beginning of this month we purchased over $300 of assorted nespresso pods. I got a box of 4 boxes of Holiday Blend in the mail 2 days ago, not opening them until Thanksgiving Day. If I can find a few more boxes to get us through January (we normally drink Holiday Blend from Thanksgiving Day through the end of January.) When we had a Keurig, I used to buy a large box of Holiday Blend. They don’t sell the Nespresso Vertuo brand of Holiday Blend at Costco. You had quite a nice day off. Today is my only day off in 9 days.I’ve got errands to do and some meal prepping to do.
