Thank you, Dream, for this. I love Mexican hot chocolate and had forgotten the recipe. I realize this is a coffee creamer, However, after you said you could just drink it. Lol it brought back an instant memory. It was in my first cookbook, which I received when I was a little girl.
14 oz. sweetened condensed milk 2 cups milk of choice 1/4 cup unsweetened cocoa powder 1 tsp. vanilla extract OR 1 tosp. vanilla syrup * 1 tsp. ground cinnamon OR 1 tsp. cinnamon extract * 1 tsp. chili powder Pinch of cayenne pepper for an extra Combine sweetened condensed milk, cocoa powder. cinnamon and chili powder, mix well. Then add in other ingredients, mix well. Warm over medium heat for a few minutes until your mixture just starts to steam. Once it starts steaming, remove it from heat.

This is great Dream I love bread we are a bread household and this will save me money. Our bakery bread is anywhere from 3.95-6.00 and if you want a loaf of homemade sourdough people charge up to 15.00 a loaf.

For the Dough 1 cup + 2 Tablespoons warm water 1 tablespoon dark brown sugar 2 teaspoons kosher salt 1 ¼ teaspoons active dry yeast 200 grams (about ¾ cup) sourdough discard unfed, at room temperature 567 grams (about 4 cups) all-purpose flour 4 tablespoons unsalted butter melted For Boiling 10 Cups water ⅔ cup baking soda For Topping 1 egg yolk beaten with 1 Tablespoon water to make an egg wash Flaky sea salt Everything bagel seasoning INSTRUCTIONS Combine the warm water (1 cup + 2 Tbsp), dark brown sugar, and kosher salt in the bowl of a stand mixer. Sprinkle the yeast on top and let sit for 5 minutes or until the yeast begins to foam. If the yeast does not foam, your yeast is dead and you'll need to start again with fresh yeast. Add the sourdough discard, flour, and melted butter and mix using the dough hook attachment until well-combined. If needed, add more flour or water (1 Tablespoon at a time) to reach your desired dough consistency. Change to medium speed or knead by hand for 4-5 minutes until a smooth dough forms. The dough should not be sticky. Shape the dough into a ball and transfer to a large, oiled bowl. Cover with plastic wrap and let rise for about 1 hour, or until doubled in size. Preheat the oven to 450°F. Line 2 half-sheet baking trays with parchment paper and set aside. Bring 10 cups of water and ⅔ cup baking soda to a boil in a large pot. In the meantime, turn the dough out onto a smooth, dry work surface (no need to flour or oil, you'll want some traction). Divide into 8 equal-sized pieces. Roll each piece into a 12-14 inch rope. Cut the rope into bite-size pieces about 1 ½-inches long. Roll each piece of dough into a ball (roughly the size of a quarter) and place on the prepared baking pan. Place the pretzel bites in the boiling water mixture for about 30 seconds. Remove using a slotted spatula or spoon and spread on the baking sheet so they're not touching and have room to expand. The bites will be easier to spread while they're still wet; they'll become stickier as they dry. Lightly brush each pretzel bite with egg wash* and sprinkle with your chosen toppings (flaky sea salt, everything bagel seasoning, etc.) Bake until golden brown, approximately 13-15 minutes. Transfer to a cooling rack to cool fully. Serve with a mustard or your favorite dipping sauce. NOTES You do not need a stand mixer to make this dough. You can also combine the dough ingredients in a large bowl and mix with a wooden spoon. SEE the "substitutions and variations" section above for various substitutions you can make with this recipe for eggs, butter, and more. If you want to make Cinnamon Sugar Sourdough Discard Pretzel Bites, omit the egg wash and bake as directed. Let the pretzel bites cool completely. Brush with melted, unsalted butter and toss in a cinnamon sugar mixture (¼ cup granulated sugar + 1 teaspoon ground cinnamon).

1 Pack Active Dry Yeast 1 cup Warm Water 1/2 tsp Salt 1 tsp Sugar 2 tsp Olive Oil 3 cups Flour Directions Dissolve yeast in warm water(less than 100 degrees) in a large bowl. Add salt, oil and 3 cups flour. Stir well. Add flour until bowl is clean. Knead for 2 minutes or more. Cover with a damp cloth or oiled plastic wrap and let rise for 1 hour. Brush 14 inch pan with oil and bake at 450 degrees for 15 - 20 minutes. Tip: bake for five minutes, take out and put topping on, then bake for 15 minute

These jumbo blueberry muffins are just like the ones you eat in a bakery! They are fluffy and soft muffins. They are studded with gorgeous blueberries throughout and topped with a buttery sugar streusel For the streusel 3/4 cup all-purpose flour 1/3 cup white sugar 6 Tbsp butter cold For the muffins 1/2 cup butter melted and cooled 3 Tbsp oil 1 egg room temperature 1 egg yolk room temperature 1 cup buttermilk* room temperature 1 Tbsp vanilla 1 cup white sugar 2 1/2 Cups all-purpose flour 3 tsp baking powder 1 tsp baking soda 1/2 tsp salt 1 Tbsp cornstarch 1 1/2 Cups fresh blueberries INSTRUCTIONS Line a 6 tin jumbo muffin tray with 6 liners and set aside. Melt the butter and prepare to measure the rest of your ingredients as it cools. In a small bowl, make the streusel. Combine flour, white sugar, and cold cut up butter. Using your hands, mix it together until combined into a crumbly, streusel mixture. Set aside while you make the muffin batter. 3/4 cup all-purpose flour, 1/3 cup white sugar, 6 tbsp butter In a large bowl, whisk melted and cooled butter, white sugar, egg, egg yolk, buttermilk, oil, and vanilla. Whisk until combined. 1/2 cup butter, 3 tbsp oil, 1 egg, 1 egg yolk, 1 cup buttermilk*, 1 tbsp vanilla, 1 cup white sugar Add in flour, salt, cornstarch, baking soda, and baking powder. Using a spatula, gently fold until just combined. It's important not to over mix with muffins. 2 1/2 Cups all-purpose flour, 3 tsp baking powder, 1 tsp baking soda, 1/2 tsp salt, 1 tbsp cornstarch In the bowl with the blueberries, add 1-2 tsps of flour and gently toss around until evenly coated. The light coating of flour will absorb any extra liquid it may have before adding it into the mixing bowl. 1 1/2 Cups fresh blueberries Add the blueberries and mix in a few times. Evenly divide the batter between 6 jumbo muffin liners. Sprinkle streusel on top. Bake the muffins at 425°F for 5 minutes, then turn down to 375°F and bake for an additional 12-15 minutes. The muffins are ready when they bounce back at touch or a toothpick inserted comes out clean. These muffins are best eaten fresh. They stay fresh covered at room temperature for a few days, or in the refrigerator in an airtight container for up to 1 week! NOTES to create buttermilk, mix 1 cup of milk with 1 tbsp of lemon juice or vinegar. Allow it to sit on your counter for a minimum of 10 minutes. Make sure it is at room temperature when adding it into your batter

Small batch PB Crumble Cookies Makes 4 Lg cookies Preheat oven 350°F Line cookie sheet with parchment paper or silicone baking mat In medium mixing bowl Add the following: 4 tablespoons melted butter 1/4 c Brown sugar 1/4 c peanut butter any kind 1/2 teaspoons vanilla measure with your heart on it 1 egg yolk Mix ingredients until well combined. Add the following: 1/2 c all purpose flour 2 tablespoons granulated sugar 1/4 teaspoon baking soda the one in the box 1/4 Salt Give it a mix the dough is well combined the dough is thick. Roll into 4 balls place them on cookie sheet. Flatten slightly with your hand. Bake at 350°F for 12 -14 minutes. While cookies are slightly warm. Melt a couple of tablespoons of peanut butter and drizzle over peanut butter cookies either by fork, pour, or like Dream did a ziplock bag with the corner cut, or you could use a piping bag. Let cookies cool or eat slightly warm. Enjoy!!

I'm on day 9 but unfortunately forgot to feed it last night, RSV has a chokehold on our family. I got some rise on day 3 but none since. I am getting the yeasty smell and some bubbles. I did a float test tonight and it sank straight to the bottom. Should I just continue feeding?
Continue feeding and give her an extra bit of flour so a bit ticket than normal
