Funny, I don't really see Vietnamese people actually ordering coffee in Starbucks. I think they go more for the teas and matcha. I think those who really love coffee and would prefer a Capp will go into one of the other fancy cafes like Workshop...

Im a young Vietnamese living in the West & have been in F&B for 10 years since (waiter & bartender). Would there be any opportunity or it just gonna be a drop in a bucket coming back to the motherland? I know those jobs don't pay really well in Vietnam (or any country) but still I'm getting 15 euro/hour now. The English teaching side of things dont look too well for those second-gen Vietnamese coming back as well coz the locals want Western-looking teachers.

You can definitely by an ESL teacher, worked with loads of Viet Kieu teachers, some parents and some companies might be funny about it but most parents and most decent companies are fine (I think). Ini my experience the salary is only gonna be 300-500k per hour for about 20 hours a week at most, so factor that in - it's not a 40 hour work week. Other places may be different. I don't know exactly what servers make but I think it is about 30-50k an hour.

Well, maybe some fellow Vietnamese misunderstood your point. There's a big difference between an unhygienic/insanitary place and a dirty old/disorganised place. Usually the reason behind this is that the owners are too busy serving their customers and got no time to make the place "look good". Moreover, some elders are still holding the belief that "if your business is doing well, changing the look, decoration, name, etc... drastically may make regular customers feel unfamiliar and thus losing trust to the place". And that's why when you ask Vietnamese for their recommendation, most of the times you're going to end up in a dirty old place.

Most se-asian ppl are so careful about cleanliness and quality, that if a street vendor or small restaurant is dirty, they will be closed quickly. Which does not apply to tourist places where people never return. In se-asia its so simple go where the locals go and avoid all the fancy overpriced places and tourist spots.
