I'm Silvia and I'm from Matera, Basilicata, Southern Italy. With this channel, I want to show you the food that I've grown up with and share with you some of the secrets of the best, authentic Italian cuisine. I've spent most of my life growing up in a traditional 'agriturismo' and day after day I've seen my Mamma cooking some of the most incredible, authentic and tasty food you can find anywhere in the world.
Now I want to share these amazing tricks, tips and recipes with you!
Don't worry if you can't always find the exact ingredients - you can always swap and change things to your taste. Look out for future affiliate links to genuine, made in Italy products too! As my Mamma has always taught me, you should always change something in a recipe and make it your own.

Things to do after a cooking class | The Conspiracy of the Barons
After a cooking class and eating all of that food here at Agriturismo L’assiolo, a nice walk in a beautiful, authentic Italian village is just what you need.
Miglionico, 6-7 mins drive from the farm, is the perfect place to take a stroll. With its medieval castle, this village is most famous for ‘La Conguira dei Baroni (The Conspiracy of the Barons), a festival that celebrates a famous historical betrayal from a time when Italy still had kings and barons.
If you happen to be here around the middle of August time, it’s definitely worth checking out this event!

I agree. I didn't want to eat that chicken by the end of the video. The whole point of using butter is to get colour on the chicken. It just looked beige. Yuck.

sorry, Ilalians are very sparing with garlic, usually sauteing a clove in olive oil then discading the garlic..

That’s famous in Matera and in Puglia too. Also my Father loved to eat chippolini onions- can you do a recipe using chippolini? Thank you
Ciao Julia! So sorry I didn’t reply sooner! Just to let you know, we’ll be revamping my channel soon and bringing even more videos on how to cook Italian food authentically - so stay tuned! To answer your question about onions, although I’m not the biggest fan of onions myself, I know my partner and my Dad would enjoy that so absolutely I can add that recipe to my list! As for ‘chippoloni’ onions, I have to say I’ve never heard of them hear in Matera and neither has my Mom. Maybe it’s something that got lost/changed in translation on the way to America? Maybe if you link me to a picture I might be able to find out what they are. :) Thanks so much for your comment Julia. Ohhhh, this is sooo good !!! I make almost the same. I mix ricotta with egg, parsley, sugar and cinnamon. Top with meat Ragu and pecorino or parmaggiano cheese. 👏👏👏👏👏 My mouth is watering!!!
