I’d like to know why my local church went from years and years of ringing the bells of the consecration 3 times twice, (one for blessing of host and other of wine), to only one time for each. This to me is strange. And before you say I’m grasping at straws I know that Luz de Maria heard a message multiple times that the ritual at the consecration will change and this will be a great heresy.
The rubric for this is #150 in the GIRM: "A little before the Consecration, if appropriate, a minister rings a small bell as a signal to the faithful. The minister also rings the small bell at each elevation by the Priest, according to local custom." So the rubric isn't particularly specific, and there is some allowance for variation according to local custom. It seems legitimate to ask your priest in a charitable manner why the change to an established custom so that you might understand, but there is no requirement to ring bells at all, and variances like this in no way rise to the level of heresy, simply the pastoral judgement of the pastor.

Its ironic that you're teaching servers how to serve correctly. Did no one teach you that an altar mensa is a consecrated space, you only place on it what is required for Mass. It's not a table, desk or counter top for you to put your crib notes on.

My priest told me that i should not be ringing the bell when the priest is still saying something. .ie we ring after he priest must have made the sign of the cross on the host and the last word jesus christ then we ring and he continue. Priest say the bell interupts somtimes

I was supposed to be the second candle bearer on mass but then the cross bearer didn't show up so I had to move up to the book bearer when I hadn't trained in that and the book bearer wasn't supposed to train in candle till the next week but she had to do that
