I'm much prefer the spring rolls with the rice paper wrapping but unfortunately you can't find that in Vietnamese restaurants in atlanta. I just have to try to make my own.

In actual shock. The package of the noodles said “boil in 750ml water for 6 minutes” thats it.

Hi @MartinoMeraiah, these noodles are perfect for pad thai! Soak them in water before using. The sauce in the pad thai will complete the cooking of the noodles.

I thought the green stalky leafy part wasn't edible? I thought only the bulb was edible.
Lemongrass is nearly all edible and can be used in cooking. While the bulbous end is commonly used, you can also chop and freeze the green stalky parts to use in soups, stir-fries, and other dishes, as long as you remove the dry outer layers until you reach the fresh parts of the lemongrass and only use the bottom 2/3 of the stalk. A good comparison to this is asparagus. You typically trim the woody parts of the stem and only use the fresh, soft parts of it. It's the same idea with lemongrass, except it's the reverse. Trim the top ( and bottom hard stem demonstrated in the video), and use the bottom 2/3. 😊

Will it taste the same as if it was fresh? I hate foods with freezer-burn taste.
It will be less intense than fresh but will still be strong tasting as long as you make sure to freeze it, airtight. I would even suggest using a Food Saver to seal in the freshness without having to worry about freezer-burn / taste. I hope this helps. :)

Hi @raniayacoub1770! I have not used brown rice vermicelli / glass noodles before however, it peaks my interest and I will look for them next time I'm at the grocery store! If I had to take a guess, the brown rice vermicelli noodles are similar to white rice vermicelli noodles. You can most certainly substitute the pho noodles for your brown rice noodles for my chicken pho recipe. Another suggestion is to cook the noodles per package instructions (for 1 portion) and add it to a large bowl as the base. Then add a handful of mixed green salad or 1 romaine lettuce leaf, cut into fine thin strips, 1/4 cup sliced English cucumber, chopped mint (5-6 leaves), 1/4 cup bean sprouts (optional), 1/2 cup shredded rotisserie chicken and a handful of shredded carrots if you like. If you have fried shallots or garlic on hand, add them on top. For the sauce, in a small bowl mix together 1/2 lime (juiced) together with 1 Tablespoon fish sauce, 1/2 Tablespoon white sugar, 1 clove of garlic (chopped or pressed), and 1 chopped fresh Red Thai chili (or jarred chili to your liking). The chili is optional if you like your sauce spicy. Skip it if you don't like spicy sauces. Taste the sauce and adjust it to your liking. I like mine well balanced between salty, sweet and sour. Then, pour some of this sauce over your noodle bowl, mix everything together, and enjoy! 😊

Hi JLD. Yes, same process however your soaking time and boiling time may need to be adjusted since they are cut into different shapes than noodle strands. I would aim to soak between 10 to 15 minutes in lukewarm water, then use the same dunk / boil method for 5 seconds before using them for your drunken noodles recipe.

This looks really good! But it must last longer than 4 days in the fridge, especially if you are cooking the garlic. This would probably be fine in your fridge for weeks.

Hi l have two packets of rice stick noodles,one made in Thailand the other Vietnam ,the Vietnam one is around 5 mm Thai one 10 mm.the Vietnam one says to boil for five mins then put into cold water briefly drain and stir fry,the other is as you say just soak in warm water for several minutes.its the same ingredients so is it best just soaking rather than five min boil on Vietnam ones,confused many thanks.
Hi Jay. It sounds like you have medium and large-sized noodles. The rule of thumb is to always soak the noodles first. I would ignore the boiling instructions because that ruins your ability to cook with them (if that is your intent). The length of time to soak them depends on the noodle size. Typically for Medium Noodles, soak them for 20 to 25 minutes and for large noodles, soak them for 30 to 40 minutes in lukewarm water. If you're interested, I wrote a more detailed post to explain how to get chewy noodles by taking noodle size, soak time and purpose into consideration. It just adds flavor they add alcohol to your meat when you have a cook out or so you wont have to worry about the alcohol as long as you have an adult making everything for you and depending on the state you live in
You can double the amount of maple syrup and skip the whiskey. That should give you plenty of maple flavour still! 😁 Or better yet, use maple-flavoured bacon and the same amount of maple syrup without the whiskey. 😉

Ohhhhhh I've been looking for something like this and this one looks great!!! Does the sugar have any function other than adding some sweetness to it? I'm generally not a big fan of the sweeter chili sauces, so I wonder if that's ok to skip (or to add less)? Thanks!
Other than adding sweetness, it helps balance the flavour and tame the heat (along with the vinegar). Having said that, yes you can definitely reduce the amount of sugar by half and see how you like it. Then add more if needed. :)

Hi Miss Jenn. Depending on how thick your meat slice is, the cooking time is approx. 3 to 4 minutes on each side on medium-high heat or slightly longer.
How do you store the remaining soaked noodles?
Hi Anushka. If you end up with leftover soaked noodles, you can place two sheets of paper towel inside a plastic zip-top bag (to help absorb moisture) or into an airtight container, place the noodles inside and store them in the refrigerator. Use leftover noodles the next day since wet noodles will continue to soak and get soggy if you leave them for longer than two days. I hope this helps?
