    Why do you need to use pie weights if you’re using a perforated ring and mat? The usually don’t even require docking…

    Bonjour Yann. I love the video on brioche. I once had the most delicious brioche in San Francisco. It had golden raisins and a beautiful orange floral scent. Not sure if that was orange blossom or Fiori d in Sicilia. Maybe even white chocolate for sweetness? I have tried making it twice. It was really nice with the orange blossom but not quite enough and something felt like it was missing.I did not add white chocolate to either bake can you help me with some suggestions? I would greatly appreciate it. 😊

      Hello, It’s hard to answer because I can’t really “visualize” the brioche you’re talking about. Something who might be good is to add orange blossom water like you mentioned. Just add enough to taste it, and combine that with some orange zest. It’s a very delicate flavor who’s pairing very well with the brioche.

    If I'm mixing by hand can I melt the butter instead? Would it affect the bread if I add melted butter instead of soften butter?

      Yes it’s going to affect the texture or the dough, the elasticity and the temperature. Don’t melt the butter, just add it a room temperature. Plus it’s going to be easier to incorporate than the melted butter.

      Thank you! AP flour means All Purpose flour, it’s a flour with less protein and gluten than the bread flour. Depends on where you leave it can be called plain flour or T45.
