What's fufu?
Fufu! Fufu is a staple food in many West and Central African countries, particularly in Ghana, Nigeria, Cameroon, and the Democratic Republic of Congo. Fufu is a thick, starchy dough made from boiled and pounded starchy vegetables, fruits, or grains, such as: 1. Cassava (manioc) 2. Yams 3. Plantains 4. Cocoyams 5. Sweet potatoes The preparation process involves: 1. Boiling the starchy ingredient until it's soft. 2. Pounding the boiled ingredient into a smooth, thick dough using a mortar and pestle or a wooden pounder. 3. Kneading the dough until it's pliable and has a uniform texture. Fufu is often served with a variety of soups or stews, such as: 1. Peanut soup 2. Egusi soup 3. Okra soup 4. Light soup To eat fufu, you'll typically: 1. Tear off a small piece of fufu. 2. Dip the fufu into the accompanying soup or stew. 3. Swallow the fufu and soup together. Fufu is a nutritious and filling food, rich in carbohydrates, fiber, and minerals. It's also a cultural symbol of community, hospitality, and tradition in many African societies.

Basic version but looks nice. I use two eggs divided. Mix in a quarter cup melted butter, a quarter cup carb quick(you could use zero carb protein powder), a splash of vanilla extract, a small amount of heavy cream(just enough for a very thick batter, then fold in the hard whipped egg whites. Then cooking on a medium low temp to get them cooked all the way through flip and finish. Tastes more like french toast but delicious. Should make three or four eight inch pancakes. No egg taste at all.

@@ObedKC It's my own recipe. I've followed a low carb diet for 30 years and missed pancakes. These are perhaps one carb or so each depending on the ingredients you use. That's why I say you can substitute protein powder for the carb quick but it's pretty low anyway. You don't need much cream at all it's simply a way to thin the batter the right amount.
