I was wondering if it’ll be alright without vanilla extract? (Online it says its just to make the butter taste richer and to make sugar taste more I guess sweeter or something. So I think it’ll be fine)

I rolled mine in cinnamon sugar for a snickerdoodle vibe. So delicious! Thanks for the recipe! Also I have tips for anyone who may need it, if you want them to be really chewy pull them out of the oven a little sooner so they can finish baking from indirect heat. If you want crispy cookies let them stay in maybe 4 - 5 minutes after recommended time 💕

2 sticks is 16 T; there's 8T in 1/2 cup (or 1 stick) of butter if your sticks are 1/4 of a pound. Love that you converted this to mini muffins. I like to keep mini muffins in my freezer for lunch boxes.
