@@TheBigYuca You can do this Bill! You’ll never need to eat another crappy tamale! 🫔 Thanks for stopping by!
I had the pleasure of trying Steve's tamales, and they were fantastic! The masa was perfectly soft and had just the right balance of flavor. The chicken filling with hatch chili was tender and well-seasoned. Each bite was packed with comfort and authenticity. These tamales are a must-try - they hit all the right notes!
@@marvinkhudadian9756 I’m so happy you enjoyed them! I’m even happier that you didn’t just eat them, but you analyzed them and tasted them thoroughly. Your description is exactly what I attempt to achieve when making my tamales. Thank you so much, Marv!
Good afternoon, You talk about your New Mexico green chili marinade, Do you have that recipe? Thank you Lew

I always use pickled jalapeno juice in my canned salmon and also pork and canned beans

@@condeerogers5858 Enjoy! I think you’re going to love them. Thank you for watching and sharing your kind words.
Hey Steve, good point on the premium chorizo. Growing up in South Texas I've had a ton of low quality chorizo with big hunks of gristle... For those who want a vegetarian alternative or a workaround if premium isn't available, Cacique makes a soy chorizo which is cheap and excellent. I try not to eat soy because of the issues with the hormonal stuff, but a little bit here and there won't hurt. Thanks for all you do brother!
Hi there, Joe. I’ve tried so many chorizo brand and chorizo from other countries and I always come back to this particular package from Cacique. The soy chorizo does have great flavor as you said. I’ve used it in the past but really missed the meatiness of real piggy lol. Mom was born in McAllen and Grandparents from El Paso. Thanks you for watching and for the kind words. I appreciate you, brother, Joe!

Don’t use that off the shelf lard. It’s so unhealthy for you. Render down your own from pig fat. Better for you and taste better.
Thanks for the tip, Will. My local Mexican market sells rendered pork lard in their deli. Would that suffices? I’m willing to try it out. But my family used the “off the shelf” lard for a very long time and they all lived into their late 80s early 90s and none of them died from heard disease. We eat these once or twice a year if you get my drift. Thank you for sharing and caring, Will. Your recommendation is heartfelt pun intended 😉🫶🏽✌🏽 Steve
Would folks here advise freezing cherry tomatoes if I didn’t want to process them first before sealing? Thanks in advance! 😊
I’ve never frozen cherry tomatoes so I can’t advise you as to whether or not vacuum sealing them is a good idea. Sorry.
@@Cookingwithsteveg I went ahead and did it and it worked fine. I want to just use them later in sauces so they should be fine. Thanks for sharing the vid. It helped a lot. I have a bunch of peppers too. :)
Yeah, that is an awesome pla4e 9f redried beans... Put some of our families chili on that and that is pure Heaven brother... Thank you ChefSteve. God bless you brother

These beans look so good!! I appreciate how you explain the simplest things like how to smash the beans. I’ve tried to ask my relatives how they make their beans and the act like it’s “common sense” 😂.

The right amount of fat. Im doing this recipe. I usually make healthy refried but screw that. Good job Steve 👍
Hi Dan. Once in a while it’s OK to eat, naughty, lol. Enjoy the recipe. And remember, you can tweak it here and there to your preference. You can incorporate more chorizo as I mentioned in the description and seasoned with salt to your taste preference. Let me know how it turns out. Take care. Steve
SERIOUSLY STEVE !!!! I’m so craving your beans now….. I would buy your beans by the pound just like I do your beef jerky… I’ve had the pleasure of eating them with some fresh hot tortilla chips. Ummmmm Yummmm
Roll that beautiful bean footage!!! The proof is in the pedo! 😂 Thanks Bud!
I knew a girl in LA who made her beans like this but cooked the bacon fresh and used it instead of chorizo. Perfection sir.
Thank you, Jayson! That’s very nice of you to say. I love bacon! It goes so well with beans. I’m 56 year old and I can still vividly remember my grandmother teaching me how to make frijoles de la olla. She would chop a pound of bacon and sauté it in the pan. When the bacon was cooked she’d remove it from the pan. She’d then fried chopped onion and freshly chopped jalapeños in the bacon grease and then pour it all (bacon grease included) into the pot of beans. I’m from the Los Angeles area, still here. There’s a lot of Latino food influence out here. Thank you for watching and taking the time to comment. ✌🏽 Steve
@@Cookingwithsteveg When I lived in LA, my favorite Mexican market was Carniceria Los Compadres on MLK, Blvd. I'm still looking for something similar in the greater Phoenix area. I do have a more upscale market called ponderosa, and while their meat counter is legit, the rest of the offerings is scant to say the least! My wife and I miss our favorite Mexican food restaurant, and to your point their chips, salsa, and beans are killer!
Cooking with my favorite Chef! Never disappointed Awesome video Thank you so much
Thank you, Brother Joey! Much appreciated!

if the meat was frozen could it cut it as thin as well?
@@johnq4196 hi John. If the question you meant to ask was if the meat was not frozen, could it cut it as thin? The answer is the meat definitely needs to be semi frozen in order to cut the meat as thin as you see in the video. Otherwise, the meat gets dragged into the blade and just shreds. It’s next to impossible to cut meat this thin without it being frozen. I hope this helps. Thanks for watching and commenting.
I just found your channel, and I'm liking what I see so far. I specialize in authentic Mexican cooking (from Mexico), and I've actually taken a few things from you to try in my own cooking. I like to take different things from different states and add it in to my own recipes. (I'm from California, but I love adding new ideas to my food.) I have a few ideas that I got from you that I'm going to try in my own food. Thank you for sharing. I subscribed to your channel, so I'll be back as often as you post! God bless.
@@sumbi8858 This is such a great thing to hear. The reason I enjoy sharing what I have learned about cooking is so others can benefit and learn as well. Cooking is learning. Learning from others and then putting my own influence into the recipes is how I’ve evolved into the cook I am today. I’m glad to hear you find my cooking worthy to learn from. Thank you for subscribing. I look forward to sharing more with you. Blessings. Steve
Watching from Thailand 🇹🇭
I might be new to Tamales, but I'm a PRO when it comes to long fermented breads and pizza doughs! This looks really great!
Fresh homemade bread is the best. I bet your bread is amazing! I don’t bake often but when I do we thoroughly enjoy it.
I came here looking for a slicer review, but I am also from NM and looking for thin crispy jerky, bonus!
@@kevincraig6794 Hi Kevin! Thank you for the kind words. Viva NM! NM style thin beef jerky is the best! Enjoy!
This looks like a very decent sourdough indeed, bit of ham n cheese while its still warm, lovely. I hate to say it as I avoid any sourdough bread these days, either toasted rock hard in an overpriced café or there's a queue of pretentious trendy people I wouldn't want to be seen with queueing up for the bread guy in the square. This video restores what faith I had left in sourdough! Bravo👍
@@SteviesVinylCupboard Hi Stevie! I agree with you 100%. The resurrection of Sourdough bread baking is riddled with “holier” than thou self righteousness. Holes are for underwear, socks and T’s 🤣 Great to hear from you, Buddy! Cheers
Life saver 🛟 what a relief! My starter was feeling like a pet . Did you leave it on the counter after you fed it waiting for it to rise?
@@MonieMuse I leave my starter out on the counter after a feeding only when I’m going to prep my dough for baking the following morning. If I’m not going to make bread anytime soon and I’m feeding my starter (I named him Chuy) I put him back in the refrigerator once I’ve fed him. Hope this helps. Always feel free to contact me, Monie, if you have any questions.
Thanks Steve! This is exactly what I needed! I have a starter in the fridge that I haven't fed in months and one on the counter that I feed every day. Good to know that I can just use the one in the fridge and quit wasting flour on my countertop batch!
You’re welcome, Brett. Keeping it refrigerated allows you to feed it less, like once every two weeks or even once a month. When you want to bake bread remove your starter from the refrigerator a couple days before baking, feed and let it rise on the day you plan to make the bread. I usually do an overnight fermentation. Thanks for checking it out.
I know how delicious your sourdough bread is.
Rolling rocks in the back of the fridge yeaahhhhh buddy
Great video I love bread 🍞 Thank you Steve 😊 well done
Thank you, Brother Joey! We love bread too 😃
How many tamales did this recipe make?
Approximately 125 to 150 tamales.
I think the probe would work better if you dont stick it all the way in the meat i had a probe once that work best at the tip so when you stick it all the way it will say its the right temp on the tip
Thank you for the suggestion. It makes sense. I’ll give it a try next time. Thanks for watching and taking the time to help. ✌🏽
Delish! Great job
Thank you so much, Denise!
Great review, does the instructions say preheat with the meat inside? I thought you should never preheat with the meat inside. Also, I think next time you should place the probe in the thicker cut of meat.
In the video I watched on the Firstbuild website they put the meat in and preheated the smoker. I’m going to try your way next time. One of my friends has the same smoker and he said he waits until the meat forms bark crust to insert the probe. He said he gets more accurate temp readings that way. Thank you for the kind words and great suggestions. ✌🏽 Steve
People who really know how to cook make it look so easy. Those look delicious. I'll take mine without sour cream. I'm not a big fan of sour cream. It looks like a lot of work went into that recipe. Bon appétit Steve.
A labor of love. It is very time consuming 2 entire days worth. Worth every minute. Thanks for watching.
