Yes we stayed at Serene Beach Hotel. They did have a vegetarian spread - some noodles, fried dumplings and French fries. They also served fruit, and breads including waffles. They do have a live counter where they make eggs to order, in case you do eat eggs. My next video which is about our second day in Da Nang will start with the breakfast spread.

We had the physical IDP. I'm not sure whether they would accept any soft copy, they would want the physical IDP, just as they would want to see your physical passport. Soft copy probably is okay for local people, not for tourists.

The person you rent the bike from can guide you about parking places along the route you choose to ride on. Restaurants/ cafés like Starbucks have their own parking. As far as the other places we stopped at, most of the places had designated parking. As far as places that don’t have designated parking are concerned, the person we rented our bikes from told us that we could park in any spot that was in not in the way. It is generally assumed by the locals that people on a motorbike are tourists (except delivery people ), so you do get that consideration. In fact as we were riding on the Rebel along the coast we got quite a few cheers and waves from locals!

As far as Petrol is concerned the bike is usually rented out with a full tank which should last you for the day. Petrol stations are easy to find on locals maps like Kakao. You will need to refill the tank while returning the vehicle. The person you rent from can also help with locations of gas stations.
