WTF, this ain't Vietnamese Banh Mi. The mayo is wrong, daikon/carrot pickle is wrong, the baguette ain't Vietnamese (it's hard French baguette bought from super market), no purple onions ever in Vietnamese banh mi, and what's up with the yellow, orange and red pepper. This is all wrong.

that's not exactly an eclair- I mean yes its choux pastry but eclairs are a certain shape, filled with cream, and draped in chocolate. What you made if left like that until consumed I've always heard called choux puffs. If you fill it with cream its a profiterole, and if you stacked those together with caramel as glue you make a croquembouche.
