almost none of those words are "informal." they are just different words

Male is not the correct “formal” version of “guy” because they are in different categories. The closest to “guy” is “man” to refer to the gender. “Male” refers to the sex. If you are still confused, I encourage to hear biologist (such as Forrest Valkai) explain it.
