Isn't this just magnetic levitation with diamagnetic potential well so the levitated magnet doesn't fly up to the magnet above and ruin the illusion?
Yes. But why call this an illusion? It does levitate at room temperature, and without energy input! And it wouldn't without the diamagnetic forces at play. Also, I made an effort to not hide how it works, including the part at the end of the video where I show the magnet structure above.

I think you are supposed to preheat the mold before pouring the bismuth into it so it won’t splatter. 5:19
Yeah I think that is a good idea, preheat and dry. From my memory of this video (13 years ago!!) the biggest problem was that the mold was very humid. I think the splatter was caused the mold's moisture evaporating into steam. There wasn't any cracking on the mold caused by thermal expansion, it was just water steam splattering the molten bismuth.

Gravity will always be there. You have to use other forces to fight gravity's force. Diamagnetic force, even though it's very weak, can be used to fight gravity, with the help of other forces or if the magnetic field is big enough. Planetary core with 400kv running through it if you look at the math you could pull it off, bismuth is not very conductive but still holds a bit better than the grafite and you need a equator but no charge hold like the grafite so on order while I get the rest put together this should be fun post in a few months once working 😯😆😆😆😆😆

What happens if you flip the magnet over and run it under the reflective water then? same deflection or is the deflection inverted?
Water is repelled either way, doesn't matter the polarity of the magnet. The result would be the same.
