Simple reason, if you find one you're basically immortal because mobs don't spawn there. Plus it's a biome not a structure. Why add one for the mushroom biome and not one for the mangrove biome?

Have you seen the Minecraft 15th anniversary marketplace map it basically makes a lot of the biomes look super beautiful especially the jungle
