I don't know if you need to change your taming speed settings or something. If you're playing on single player then you can change the taming speed setting

I'll have to use Gigantoraptor to get babies that actually show up! and that's only possible with the configurable babies mod!

the carchar do spawn on extinction they are just rare even the gigas I've come across a max level but when I was ready to go get it it had despawned :/
