Don't do this! In most cases removing the pan from the stove onto another surface that resists the heat and then covering the pan with its lid would suffice and extinguish the fire because of lack of oxygen. Specially DO NOT ADD WATER IF IT IS AN OIL FIRE! You're just gonna spread it more and potentially make it spark towards you. This was probably a non oil fire and dude was lucky, not everyone is and fire is a very tricky matter.
