Question : How do we identify individual genes causing these traits within the vast genome of the bird ? e.g. blue colored eggs. Which equipment will be required to do this i.e. identification of individual gene.

This requires genetic testing. There is a company that does that for parrots and pigeons (avian2.animalgenetics.com/Avian/Avian-Index.asp avian2.animalgenetics.com/Avian/DNA_Typing/Avian-DNA-Typing.asp) but you could ask about chickens. Another company doing some DNA testing: www.eurofinsus.com/agrigenomics/our-services/animal-genomics/service-categories/poultry/

Why does Kentucky have "mobile processing units" that aren't mobile? Why are Kentuckians not allowed to process at home for sale? Because of Perdue and Tyson? What about the stay at home mom that wants to produce, process, and sell locally instead of rounding up 50 birds, transporting them over 2 hours away to a "mobile processing unit" and then haul everything back home 2 or 3 pr 4 times a year. This is wasteful and does not have the best interest of the environment or the general population at it's heart. The only thing I have been able to come up with is that large corporations are more important than the residents.

Those regulations are out of the university's hands. The regulations do have the environment and the general population at heart - just not making things simple for the small poultry producer. The mobile processing unit is mobile - but you need an approved docking station. Environmental Protection Regulations require that, so wastewater is not improperly discharged. Poultry meat and eggs are considered hazardous foods since if improperly prepared and handled can make people extremely ill. You can have your own processing facility - as long as it is state approved, and you have a HACCP plan to prevent illness. Not cheap, so wouldn't be economical for 50 birds. Liability insurance is a good idea since if you are selling 50 birds for extra income and someone gets sick from improperly handling the chicken you could be sued and lose everything.
