Many years ago, I used to have a cocoa muffin recipe that simply used the pumpkin as a replacement for the fat. They were pretty decadent, and the cocoa flavor hides the pumpkin (which, by itself, doesn't taste like much).

I used store bought hummus, thinned it out with a little water and the juice of a lemon. Then I added in chopped sundried tomatoes, minced garlic and some italian seasoning! That was basically it! Then I added in frozen peas, cannellini beans and chopped spinach. So YUM! :)

At first I did not think I wanted to watch this because the recipe did not look interesting. However after watching you make it, especially in your new beautiful cookware, I now want to make it. My husband and I are not too far from your hometown. We are in Huntersville. Last weekend after hiking at Lake James State Park we got take away pizza from Moondog Pizza in Morganton. The vegan pizza was amazing. I normally eat healthy, whole food plant based but it was worth the splurge.

They are my fav brownies now! I did just make them again, I swapped the 1 cup date sugar for 6 medjool dates, and they were not as sweet but just as delicious...that way I can eat one for breakfast. HAHA! :)

This is pretty good looking! I don't really have a sweet tooth, but I think I could adapt these into breakfast bars if I dial back the dates a little - maybe chopped dates rather than date sugar.
That's a great idea! I actually just made them again and I used 6 medjool dates instead of the date sugar and they were just as good, but not as sweet!
I've got a vegan pumpkin pie recipe that uses (blended) date pieces. I hadn't thought of "date sugar." I have a bottle of date syrup that I use sometimes though.
Yea! i've just recently discovered date sugar. I do like it in baked goods that usually use cane sugar!

I absolutely love the method you used for the biscuits! I’m definitely going to try that. The Starch Solution has some good oil free gravy recipes. I’ve modified them into more of a country gravy by using plant milk in place of water.
