    Steps - 1). Prep ribs and season with rub 2). Smoke at 275F for 2 hrs 3). Wrap in foil with butter and bbq sauce 4). Place back into smoke and smoke for 1.5 - 2 hrs until just about done 5). Remove from foil, brush with more bbq sauce and smoke for another 10 mins to finish

      No. You should be fine leaving it out. The sugar mostly helps the yeast activate faster. Might take more time for the dough to rise without sugar.

    Please never let chicken get to room temperature. Chicken is one of the most bacteria prone proteins and it’s very easy for chicken to go bad. Letting it get to room temp is like leaving the VIP door open to the bacteria club.

      To each their own. Letting chicken sit out 15 mins prior to cooking is safe. It actually helps cook it more evenly fwiw. If internal temp got too high, then yes, bacteria will grow. 🤢

    Man, you should never let chicken sit out to come up to room temperature. That is very dangerous.

      To each their own. FWIW, Letting chicken sit out for 15 minutes before cooking actually helps cook chicken more evenly. Basically so the outside doesn’t burn before the inside is done. I’ll pin your comment. Let’s get a debate going 😀

      It's only dangerous because you're eating sh!t chicken. It's not the chicken that is dangerous, it's the salmonela bacteria that is on your raw chicken from nasty prep at the slaughter house.

      The *internal temperature* can’t be in the danger zone . If you leave it out for 20 mins or so the bacteria doesn’t have enough time to produce the toxins that make you sick Perfect time for a quick marinade

      At the 5 - 7 second mark. It’s real lite. Seasoned with garlic salt and pepper. You can really use whatever seasoning you’d like. Just keep away from seasoning that will burn due to the heat of your skillet.

    Just roast it right, then you don't have to worry about drying it out without taking the backbone out. If you cook the bird with the back bone in than you get all that good flavor into those stock bones!

    I start mine cut side up so it gives the brown sugar and cinnamon some time to set into the pineapple then I flip it down.

      @@Jakeyisdeadyeah something’s wrong here. After 72 hrs (which I agree with others is excessive - 48 hrs max for me) that thing should be bone dry. This is closer to what the steaks look like about 15 minutes into the dry brining process as the salt begins to draw out the moisture but hasn’t had time to evaporate yet.
