We make potato salad similar, but we usually keep the potatoes in cubes not mashed. We add all sorts of things depending what we have and what we fancy, we do like spring\green onion it it too 😀

Your chopping board moving around is going to drive you crazy too, a blunt knife & sliding board is a recipe for frustration! Try putting a tea towel or a couple of pieces of slightly damp kitchen paper\towel under it & get a new knife or sharpen it 😂 it will be so much easier 😀

As for plating...I think it's because it's a deep box without much surface area to lay everything out nicely 😁 though it still looks great!

Of he gets annoyed by you asking how his lunch was you lovingly prepared make him sandwiches, plain and boring, nasty cheese slices on dry white bread should do it. Then he can have no questions...or let him make his own. Don't tolerate his bs! As the saying goes 'give them an inch & they will take a mile!' Nip it in the bus before he learns that if he gets grumpy & annoyed you won't speak. X your cooking looks great & he's extremely lucky! But, remember, if he's a beat a week of boring sandwiches, salad, the standard floppy lettuce, not so crisp cucumber...as boring as you can make it or crap like plain pasta with a bit of mayo, no seasoning & a bit of tuna in oil, not drained properly will teach him a lesson!
