It's hard to tell, the season I of the anime ends at chapter 19 but they changed the order of the events and season II is a different storyline. If you don't mind about some minor differences start at chapter 20 but btw read it complete from the start only means 19 chapters more. Hope it helps and sorry for late reply.

A lot, i advice you to read the manga if you like this serie, there are actually 21 tomes (10 season 1 and 11 season 2) but it isn't finish yet. Be patient, first 2-3 tomes looks all the same but slowly the manga goes better and better.

How much did they cut out?

why is it that the anime always sucks compared to the manga which is always better.

i just don't think it's fair. everyone loves the nice moka but don't accept the real moka. the only tine they really want her around is when they need her to bail their asses out.
