Weber Kettles are all I use on my channel. I see you posted this a year ago. If you're still active or still trying to work this out, look into two widely used methods most kettle owners use to smoke meat; The Minion Method and The Snake Method. Both of these solve every problem you mentioned here. Good luck!

Hope it wasn’t galvanized. Slow and sear offset basket works really well I made mine out of expanded steel. Works great for rotisserie as well.

just use charcoal and a couple chunks of wood, although i wouldn't consider 500 degrees a smoker, just indirect cooking with mesquite wood

Catch what ya can in a cup or a bucket. Limp it wherever you need to go. Put the oil back in it when it runs dry if you can't patch it. Sucks, but that's what I'd do if I couldn't path the leak

Just get a weber charcoal basket..put it off to the side with charcoal bed and add your wood for flavor put a water pan under meat and you will get clean smoke like a smoker!..

Recipe ... soak beans for 2 to 3 hours .. rinse ... rough chop all the ingredients then add to the pot ... stir good .. add water to cover 3 inches above the ingredients ... bring to a rolling boil .. reduce to a slow boil ... cook uncovered until beans are done ... approximately three hours .... don't over cook ...nobody likes mushy beans!
