The Rigatoni alla Pajata. One of the most delicious pasta dishes that you never heard of. It’s a butcher’s dish from the Testaccio section of Rome and still on the menu of several restaurants and trattorias in this neighborhood. A must have!!! I know this dish very well as my father is a butcher outside of Rome, and I grew up eating this. One of my favorite dishes of all time!!!
