The banana leaves absolutely make the difference. I've made this at least twice a year since 2005 when I saw this recipe. Put forth the effort to do it the way Robert does. It is phenomenal. You can also use this to make some out-of-this world tacos or enchiladas.

We make this every now and then though our kids and I don't really like the tartness so we cut out the vinegar and orange juice, but everything else the same. Wrap it in tea or Ti leaves and cook it just like Kalua pork from Hawaii as their the same, cooking wise. Also followed his advice and tried the most expensive Tequila to cheap $60 Tequila. 1st time I used Patsch Tequila ($300) and $100 to $200 Tequila like Patron Reposado and for cheaper brands Don Julio ($60). Now we don't drink so still got 5 types of Tequila that we only use to cook with. But the aged or pricey Tequila really does make a difference in taste. And use the freshest ingredients you can find, we have local Mexican markets in our state and luckily they have everything like fresh anato seeds which are a must. Tried some old seeds and the taste was not there. Try his other 10 min shorts like his tacos etc. Only saw this video again by chance and decided to make one this weekend.

You know what, Mr. Rodriguez? It might have been 15 years too late to comment on this, but I guess I'm having some debate on the Puerco Pibil scene in your movie, Once Upon a Time in Mexico. I understand that you're trying to emphasize athe character of CIA agent Sheldon Sands to be ruthless and unscrupulous, but... I mean... To have El Mariachi spit out when he tried the Puerco Pibil it's kind of a bit overboard, you know? Some people take pride in that dish, and that's honestly a kind of insult. But I guess it's your creative choice and as a director, who am I to argue?

If I were the CEO of a company, I would license this song and totally do this at a keynote. Maybe that's why I'm not a CEO.
