out of curiosity, isn’t miso soup normally vegan? may i ask if anything is significantly different from the base version?
the majority of dashis mafe for miso soups use bonito shavings or dried sardines along with kelpstock. there are a wide variety of dried goods that can be used to create dashi, and each produce drastically different flavor profiles for whatever japanese food you’re cooking that calls for dashi!
