The throttle is how you do that. Its on the dashboard in front of me just to the left. It looks a bit like the throttle in an plane.

Unfortunately The only way to do that is in the scenario creator, for some reason you can't set a stop for a spawned train you will need to create a scenario starting and finishing where you want when you do this you will be asked to set instructions which is where you select your preferred stops. Hope this helps I'm still learning the scenario creator myself

You do that in the setup menu just before you load in to the route. It's easy to miss if your like me and keep button bashing menus lol
