I need a coach please. I’m in Nigeria, I make yoghurt but some of my customers complain that my yoghurt is too strong and it slaps. Please help what can I do?
Check fermenting time, too long fermenting time and storing at room temperature which keeps fermentation going is what makes the yoghurt tart/sour from the lactic acid being produced from fermentation.

Currently working on the governance of the Kenyan dairy sector and this is timely.
Njeri. Very important point, aware the worker or employee to know why they doing the particular thing for example cleaning. Making them understanding work done perfectly.
Not all farmers in every county are dairy keepers. Those farmers who are not keeping dairy can plant animal feed crops and supply to dairy farmers in their location. How it works. Everything is about Data. The county commissioners in collaboration with county officials need to carry out a county wide head count of all dairy farmers which will include how many cows they have. All dairy farmers will be inputted in a data base. Then the officials can then ask crop farmers interested in growing animal feed crops and on what acreage and provided the inputs like fertilizer and seeds and advised on agriculture best practices. These farmers will also be in the data base. Each farmer will be tasked to grow one animal feed crop be it sunflower, maize, sorghum, millet,.soya etc. The farmer then takes their produce to a miller who will convert it to animal feeds. Dairy farmers then have access to local feeds. Both farmers and dairy to own the milling factory. Both dairy and farmers form groups or coop and get a hustler business fund loan to build the factory. . Each crop farmer will be required to rotate their crop on a schedule. farmers in group A to grow sunflower, Group B maize, Group C sorghum, Group D Soya. After a year group A grows maize and group B sunflower, Group C- Soya and Group D-Sorghum. farmers will rotate growing a different crop yearly so everyone receives the same benefit and also improves the soil which increase crop yield. As for Milk processors these should be owned by Milk processors to ensure the quality and quantity of milk is met and ensure maintainance of the machines. When the Dairy farmer brings their milk to the processor any abnormality like quality or quantity of milk, the dairy farmer is notified on the spot and data collected of the abnormality and a scheduled visit to the dairy farmer is required to see why the farmer is having issues and corrective measures are prescribed. Information like the cows surroundings, housing, feeding regime, comfort can be reasons why the cow is not producing as expected. All that data is collected and the farmers is informed accordingly. Data of the dairy farmer is also collected like how many cows they have and their feeding regime. Also, data on abnormality and prescription is also collected. This way the milk processors have a history of the farmers dairy upkeep. Data is crucial as it makes traceability and decisions easier to make. Finally, Galana-Kulalu irrigation scheme should be turned to growing animal feed crops. The more options we have for animal feeds the cheaper the feeds become.
