What's keeping the dovetails from sliding out? Great design. 15 years ago I to built a queen size bed out of oak . It was a lot cheaper and of better quality than what's out in the furniture stores. My wife and I have done a series of shaking stress test over the years and its as good today as it was the day I built it. 😂 You should do the same....for quality control of course.

The top is not flat, has ridges from the 2x4 rounded corners.

Great job, looks like it's really coming together! Please be careful with the router, your fingers were getting very close to the bit. I would hate for something to happen. I know it's just an 1/8" roundover bit and there's little chance of kickback, but you can never be too careful. Stay safe and I look forward to seeing more of your videos!

Why even use the dowel? Very nice work. Looks great.
I was also wondering about this, but I think the intention is to keep the boards under tension. Notice how she clamped the frame before drilling and adding the dowels. After taking the clamps off, the frame bends back and provides tension along the slats. I believe this is to keep the boards from shifting as much since they are (purposefully) not nailed/screwed/glue to the frame. That would be my guess
