Easy Veg Green Coconut Curry Recipe | WITH Homemade Curry Paste | Quick and easy dinner recipe
Easy Peasy Veg Green Curry
This curry is inspired by Thai green curry but with available ingredients and easy for quick and healthy dinner.
Ingredients for Curry Paste:
- 1/2 cup fresh coriander leaves
- 1/4 cup fresh mint leaves
- 3 green chilies
- 1 tbsp coriander roots (or more coriander stalks if roots aren’t available)
- 3-4 onion whites
- 1 tbsp lemongrass (use only the soft part; if unavailable, substitute with 1 more tsp lemon zest)
- 1-inch ginger, peeled
- 1 tsp lemon zest
- 1 tsp miso paste (optional, but adds umami)
- 1 tsp white pepper (or black pepper)
- 1 tbsp cumin and coriander powder
- Water as required to blend
