I just ordered 2 of these for my wife and I. How difficult was it to actually put together. One of our spots is a 500 yard walk back down an old logging road.
Once we stopped looking at the instructions, it was pretty straightforward.

The heart is becoming my favorite meal. What we do is trim, cut into chunks and brine it overnight. Water enough to cover meat then add salt, splash of vinegar, peppercorns, garlic, thyme. Really whatever spices you’d like. Next morning put the meat in a bag with a packet of taco seasoning and let it marinate til at least lunch. Then fry it up and do your normal taco thing. So good! We’ve also done breakfast burritos like this with scrambled eggs, veggies, and gravy. Try it out, you won’t be disappointed!

Glad to see you tried it! Here's what I've found works best for cutting it: make that first cut like you did to take all the junk off the top end. Then, rather than trimming the fat off the whole heart, continue cutting your pieces and trim the fat off the outside of your pieces. It's easier to dice it off. Also I cut my pieces about half the width of yours so they cook easier without overcooking, and overall it seems to have a better and less chewy taste. Also some people will flour it and fry it, that tastes good too.

It's a younger deer but normally when the antlers curl up like that it won't get much bigger
That was a 1 1/2 old spike nothing wrong with that deer would have been better later
I got old pics of him 2 years in a row he was older than 1 1/2
