Cattle Drive Casserole.

This casserole comes together very quickly. You don’t need to be a hungry cattle rancher to enjoy this meal. 😜
2 cups bisquick mix
2/3 cup water
Mix these together and bake in a sprayed 9x13 pan at 375 F for 10 minutes.
1 pound ground beef
1 chopped bell pepper
1 chopped medium onion
1 package taco seasoning
1 cup water
Fry ground beef in a pan with the pepper and onion. Add the taco seasoning and mix according to package directions.
1/2 cup mayo
1/2 cup sour cream
1/2 cup shredded cheese
1 small jar green chilies
(I used a half small jar of my homemade salsa instead of chilies. About 1/2-3/4 cup).
Mix together.
Once the biscuit base has cooked for 10 minutes remove i...

Interesting info on the sorrel. I never used it or grew it. Salmon is something you can’t go wrong with. Love you made it with a pasta salad. We often have leftovers so this would be awesome!
Happy Day! I am now a huge fan of sorrel. It is a perennial here so I think you should be able to grow it! That red mountain spinach had a million seeds last fall. I’ve been picking the random growing plants from the in laws garden to use. I love the colour but it doesn’t have a flavour that I could pick out.
This salad was so bright with the lemon dressing and the fresh sorrel. This is the first year I have ever cooked with sorrel and I love it so much. My mother in law gave me some seed so that I could plant some in my herb garden. Happy Day!!!

Fascinating and delicious! I have to admit I was skeptical when someone made me a cottage cheese lasagna years ago. It was to die for! This looks amazing!

That looks yummy!! Eggs and cottage cheese compliment each other in a very unique way, especially when baked. I wonder if thin layer of crumbled salt and vinegar potato chips for a crunchy topping would do for this, the chips might get too crispy in the oven.

Yaki Udon was one of the first Japanese dishes that I ever made. Traditionally this is made with pork belly but any protein will work in this recipe or you can make this with just veggies. The sauce is typically savoury (full of umami) and a little sweet so play with your seasonings until you find what you like. Thanks for watching! Annette 🌺

@@YogiHollowFarm I liked it cold better but after it was cooked it wasn’t near as crunchy as it would be raw. It’s just a texture thing for me. Corbin warmed it up each time she ate the leftovers and really liked it that way.

Mine aren't grainy, but leak lots of water. I've never managed to freeze potatoes that weren't full of water.
Hi there! So glad your potatoes aren’t grainy. I have water in my thawed potatoes too, I just stir it back in during reheating. The potatoes absorb water during the cooking process as the starch breaks down. The absorbed water turns to ice crystals and then liquid once it thaws. This is different from raw veggies such as my zucchini that gets frozen and watery when it thaws. That extra moisture in this case is from the water in the vegetable expanding when frozen and causing the cell walls of the plant to rupture. This is a particularly helpful process when we want to use rhubarb for cooking but don’t want to have to cook it first. After freezing raw it comes out a nice soft consistency for baking etc. Sorry that was long but hopefully helpful as to why the potatoes are watery after they thaw. Take care, Annette

Salad spinners are so handy for many different things. Use mine for wringing out water when blocking crochet stuff. Yes to crispy! Best way to have them. Great tip on blanching before freezing.

Thanks for the video! I recently did this but with left over beef grease after cooking ground beef. I Rendered it down and strained it twice. The final product was white however it was soft and still had a beefy flavor. Did I do something wrong or is that the result of using that kind of beef fat? Thank you!
Hi there. I don’t know why your tallow is soft, perhaps it is because it was from the ground beef. Some beef fat will be different as well depending on what they were fed and the type of cattle they are. Some breeds are fattier than others. You didn’t do anything wrong and it sounds good to use. I’d be sure to store it in the fridge because it is soft, also it may not have as high of a cooking temperature point so I’d watch that for sure so it doesn’t burn. The tallow we can make is from almost pure fat from near the kidneys of the cow where that kind of fat is stored in larger amounts. If you buy roasts or steaks try saving the raw fat from them in the freezer and try rendering again with more of a purer fat. It’s fun to try anyway! Take care! Annette 🌺

I really do prefer it over store bought pasta but it seems we stop making it throughout the year. Learning to make fresh pasta is such a yummy skill to have. Add your favourite sauce to your pasta and you will have a meal that would be fancier than many restaurant meals. What exactly do u use tallow for
i use it like butter. saute some mushrooms or pan fry a steak
Because Tallow is made from beef it tends to lend itself well to be used as a fat when cooking with beef. Tallow can be used to cook with a high heat without burning so it works well in the frying pan and the oven. I use Tallow to brown stew meat, as the oil for Yorkshire pudding and pan frying hash brown potatoes. I have never used it to make a body skin product but I understand that is another use. Check out Dr Berg...tallow is the BEST for skin and face cream. One needs to purify tallow so it's odorless, then maybe add high quality essential oils for scent and added healing...
I dont have such large quantities of fat from my cooking, but I always end up with plenty from shaving off fatty pieces of meat and from roasting stock bones. Tallow is so delicious, useful and healthy

I hear it’s the fat from the kidneys, whereas the muscle fat of the cow will be soft like lard.

Hey friends! During the month of February my family does a food challenge where we only eat what we grew, raised, harvested, foraged or traded. This recipe was made in January so I was able to include the shortening for the dumplings. I was also using up store bought veggies that were in the fridge from Christmas. Hey there! This definitely has a sharp vinegar tang to it. Depending on what veggies you add it may add a different before or after taste. My red pickled onions have a much different flavour than this because I use apple cider vinegar. In this recipe I use pickling vinegar. Hopefully that answers your question? Take care, Annette 🌺
