Cooking it right now in my Insta Pot Vortex Plus air fryer. Already have 4 boneless pork ribs resting in the oven, cooked in my air fryer. When the peppers/onions are done I'm gonna slice the ribs, mix to all together and serve over rice for dinner.

I have plenty of smoked pork, I may have to try this!

Put a damp paper towel under your cutting board and it will not slide all over
