Ingredients
5litre Full Fat Milk
500ml Water
5 - 6 Lemon
Procedure
-Heat milk to 85 degrees Celsius in a pot stirring in between. Slightly cool by stirring for a while.
-While the milk is heating, take 500 ml water with the juice from 5 lemons 🍋 in a saucepan. Heat it. Take it off the heat when hot.
-Pour the warm lemon water mix into the milk in several batches continuously but gently stirring. Stir in a single direction to avoid the curd to breakdown into smaller chunks. C...

    I'm trying to do it, but I can't get perfect balls. They start to stick together and unify and I am left with a big solid thing. help I really need to get this right :(

      @@LeoBossio1095 Hi. For uniform shape try using syringe 💉. For clumping up, ensure the oil is chilled and the liquid is not too hot. Also the agar may not have been hydrated or dissolved well. I think this should definitely help. If not Feel free to msg me. Thank you.

      @@CulinaryPorch thanks so much for your quick answer, so the agar shouldn’t be dissolved, the idea of boiling is just to get them togheter (syrup+agar) but just that? So it should be boiled for how long? And what do you mean with agar may not have been hydrated?

      @@LeoBossio1095 simply boil until no agar grains are visible. The only point of boiling is distributing agar evenly.

    The oil must be chilled on what temperature?

      Nothing specific with the temperature. Chilled is more than enough. Actually agar has the ability to solidify 42 C. However we use chilled oil, to instantly cool with the round shape and gel up before it reaches the base of the glass. Hope is answers your question.

      60 GM's each butter, egg whites, honey and low gluten flour. Make a base mixture. Add around 1 tsp of cinnamon powder to 80 to 100 GM's of the base mixture. Caster sugar as required for coating.

      If you want to store it, you could transfer them to an Airtight container or cling wrap them and keep them in chiller for up to 3 days. However, as it just takes few minutes to prepare them, I prefer producing them when needed.

      1. Simmer until the agar is well dissolved. OR 2. Try increasing the agar quantity. Hope this helps

    It didnt work at my attempt. What did i do wrong? The bubbles felt togehter when i put it in to the sieve.

      Hi! There could be a few reasons for that problem. The agar quantity is not enough or the oil temperature was not cold enough to solidify it. Do check the quality of the agar as well. Hope this helps

      @@ก้องกังวาลสะท้านภพ orange juice -100 ml, agar agar-1 gm. Mix the two, bring it to a boil simmer for a bit, transfer to a bottle, reduce temperature slightly, drop in chilled oil, rinse and serve.

      Yes it can be made with Alcohol. If you boil, the alcohol is going to evaporate. So it would be good to warm the alcohol but boil the agar with some water instead and add the mix to the warm alcohol and follow the precess.

      Yes for sure. You might want to increase the ratio of Calcium Lactate slightly for the texture. It may not however give you the flowing egg yolk kind of texture if the pulp is too thick.

      Hi! In an airtight container, it should keep well for 2-3 days. However, I prefer fresh ones as it actually doesn't take long to prep.
