I had the feeling that the mainsheet was being held tight. I don't think backing the jib alone would cause a capsize - it is, after all, how we heave-to. The tiller extension seems to be quite a nuisance - I rarely use it on my Mirror.
Mirror Cruising exactly the same thing has happened to me in my gull. I learned the hard way to make sure the jib sheet is free running before tacking. I do find that the self bailers don’t work too well in the gull compared to the wayfarer I had before, you have to be going quiet fast before they become effective. I also agree with comment on the tiller extension but my poor technique is a bigger issue.
What Mark, model and manufacturer is your Gull? It appears to have a completely flat thwart and a bigger than the rear tank looks higher than the current Hartley.

You could tie the jib sheets together or make a continuous one so you don't lose it on the downwind side.
