Just get a Masutani knife and you will not regret it, if you want a Japanese made knife.
He’s giving that Cangshan a bad rep. That’s a x7 steel. That is an amazing knife. He just don’t know how to use it. But it definitely out performs most overpriced knives.

Yes. I do mostly table-top type of reviews. I don't invest into fancy video edits. I target my videos to Knife people which expect critical view on all knife features. For example, on this knife: Convex grind, more curved geometry, 15 angle, a bit rough handle, not so good steel. If you are ready to talk at that knife features level, you will appreciate that info from me. Also, I am not trying to be influencer and make you purchase that knife, I am not affiliated with any brand. All the knives you see on my channel are my spendings. Anyway, you are welcome with all comments and if you have any questions please just ask. I usually reply to all comments.

@@Mackle-b3o well, at home I have all kinds of sharpening tools. from "tormek" style to spyderko. This one is specifically for travels, so no, I don't use it on daily basis but yes I always take it with me if it is a trip for more than few days

Thank you for the vid. Bought a 3 set about 5 years ago. Happy with performance for the $ My partner didn't like the feel of the Chef knife at first but in time came to favour it over her even cheaper Chinese stainless Chef knife. The 3 knives are all still in good shape, i.e. no edge chips, breakages or rust - so they are a good investment if thinking long term but they need regular sharpening. So the steel for kitchen use is certainly rust resistant and tough enough but a hair cutting edge is quickly lost/squashed leaving an 'ok' edge between sharpenings. Zknives gives the following about the steel: _"X50CrMoV15(DIN) - German steel, one of the most popular kitchen knife steels in mainstream German knives. Sometimes listed it as AISI 440A, but specs are considerably different, especially the Chromium content. Typically gets hardened to 54-56HRC, and the bigger the knife, softer the steel. There is no reason this alloy should be 54-55HRC even in the 8-10 inch long kitchen knife, but apparently to avoid issues with abusive users and lower production costs, steel is kept soft. I just bought the 14cm utility ($20Aus). Nice lines, an attractive looking knife. A little too handle-heavy for my liking, and the blade was welded on very slightly askew. Other steel handled knives I have are too slippery when in use with wet or greasy hands, this one's ok though.
I forced an even dark grey patina on my Opinel No. 8 by immersing the blade in vinegar for an hour.

Thank you for exposing this fraudulent knife brand. After watching your video, I tried the same thing with my Sasaki santoku. I easily bent the blade by hand and it stayed crooked. These fancy looking Sasaki knives are total scam and junk.

I have Cutco knives for 50 years and they are by far the best knives I have ever owned. Costco stands behind their products. This guy doesn’t know what he’s talking about.
I get Cutco fans(marketing) people comments quite often on my channel. No one can clearly say what is good about those knives compared to modern ones. This comment did not even check itself, said Costco instead of Cutco. Yes, Cutco show in Costco is usually a disaster, I know the guy who does it and he knows me and he always take a break when I shop there. Also thank you for talking to me like I'm not here, I am as "This Guy" know very well what I'm talking about, just watch my video or follow me as I travelled all over the world and bought all the knives I could.
Least delusional American. Real talk, Cutco knives are pretty garbage quality and insanely overpriced. You can buy 2 sets of pro chefs knives for the same cost. It will last you longer and you will get a FAR superior experience. Cutco cult member alert!

In my experience it depends on which company you buy a Finka from. If you get the large model made by a good company like Kizlyar etc then I would put it on a similar level as an American Ka-bar. Not bomb proof but good enough. Which "good enough" is usually what militaries are looking for in standard issue utility blades anyway. Lol
I inherited some Cutco knives from my mother who bought them from my brother when he was trying to sell them in college. They are junk - poorly balanced, weird handles, won't hold an edge. I bought a 10" Cutco Chef knife (MSRP $170) at Goodwill for $0.99. I use it for things I won't risk my good knives on. My "good" knives are all flea market/thrift store finds, including a Wusthoff slicer for $3. Don't waste your money on Cutco. The only things they can legitimately brag about are their warranty and their "Made in USA" label. The knives themselves are crap.

Please don't. First of all, it is way more than 500 now. Second, if you are thinking about it, don't buy it. The only way to purchase it is just impulse and no regrets for the cost. Can you afford that?

Depends on what you expect. Steel and grind a bit better, very thin behind the edge. But overall construction and quality maybe be not up there. I assume you mean inexpensive VX with plastic handle. Choose this one if you like the look and vintage style of construction. Choose VX if you want the knife which you can care less. Also never pay full price, choose per your budget.

@@medk I can't tell based on my experience, I don't have vx now (had couple for sharpening, tried them), and I gave this one away to my friend. Steel is comparable, Arcos maybe a bit better, Initial sharpness again Arcos as it has a very thin grind. but with those steels edge retention will depend on how hard you'll use them. both will not surprise you. If you like Arcos, better go for Manhattan/Brookline knives, fully forged, but heavier.

Damn I just ordered a Zwilling pro 20cm. I paid 450 DKK which is just a bit over 60 EUR. Thanks to this video I now known to check if it it is warped, and if it is I'm going to return it.
Please let me know what you got. Are you in Denmark? Copenhagen? There is a Zwilling store downtown, maybe you can stop by and choose the knife which is straight in-store.... I visit Copenhagen every year now, love it, there is also another great knife store in the market with lots of Japanese knives, talk to those guys if you have time...
It fit's the AR rifle and Carbine with a 14' barrel ok. I have a Mossberg 590A1 that came with an Ontario M9 bayonet.

What sling attachment are you using
I am actually not running sling on shotgun at all. That attachment is for just in case, I primarily wanted it to mount pic-attached small flashlight. On rifle/carbine sling is a must, not on shotgun, in my opinion.

@@knifeshopping I am looking for something more in the premium category. I really like the Performer series as far as the handle, sleek black look, and DLC coating. I just don’t care for that knife styles they offer. I wish they had a half bolster chefs knife and maybe a Nikiri. I’d buy those but I just can’t get myself to spend $350 for it if it’s not perfect.

I can recommend few which I know and they stand out for some reason: Anarchy knives: German steel, designer look, made in Portugal, not too expensive. Artisan Revere knives: Premium USA steel, made in USA. Warther cutlery: Made in USA, not so premium look, not too expensive, very good steel. Cangshan Thomas Keller knives: China, but good Swedish powder steel. $350 for x50 steel at 57 +/- 1 HRC, and some have that huge awful bolster. Watched a video on the making of a Wusthof, they are cut from stamped sheets and a machine drop forges the bolster to the handle. That's the 'forged' part. Wusthof is a big no from me.
Agree, and as I entered that Wusthof factory store in Solingen, Yes! I walked out of that with that small chef's and never regrated. Good overpriced toy.

I've always wanted to do a side gig sharpening knives for people but posting in Craigstlist and FB Marketplace just returns a lot more weirdos than people who actually want a sharp knife.

I do sharpen, but I only post my ad in local facebook group, so only neighbours of our relatively wealthy town can see that, and I don't have a lot of customers which is OK for me. I charge nominal fee $1 per inch of the blade, and it barely covers any of my expensive hobbies. Just for interest. and yes, there were few wierdos which I carefully asked not to bring that garbage again.
Wusthof makes two different knife sets. One that is forged and another that is stamped. This knife is fully forged which is why its expensive. What you saw was probably the gourmet series which is like $80
These were the first Japanese knives I bought a long time ago, because of Bourdain's book. Had the 8" chef and the santoku with the dimples. I was happy with them for years, until I I couldn't stand the handles anymore. Too slippery when wet, especially when cutting meat. I then picked up a single blacksmith 210 gyuto with a blue 2 core, fell in love with wa handles.

I like the design as it is comfortable and looks great. However, it's absolutely pain to sharpen on the stone. There is something off with the steel used.
Can you please elaborate on sharpening issue? I suspect if the hardening is not so good, there will be a lot of burr. I mostly hone my utility knife, I less care for perfect edge on that.
I'm not sure what is it with this one particular IKEA knife. I have also IKEA VG10 and Eden Aus10 knives. They are much easier to make them hair shaving sharp. I use 1200, 3000, and sometimes 8000 grit stones with strop covered in diamond paste (DMT). This particular IKEA knife takes me the most time to sharpen it to my liking. I was also thinking about botched hardening...

Will do! In few words, Perfomer performs ! Out of those 3 only performer stayed in my kitchen and everyone loves it.

I just realized that knife logos are not readable on the video, they all washed out.... anyway, another reminder what dishwasher does to your knives....
Both the big Germans, Wusthof and Zwilling, I dislike them. Generic x50 steel for such a high premium. A Victorinox 8" with its x55 and price and a muuuuuuch better grind and thinness is soo much better overall.
In my opinion Wusthofs are way better, thinner blade and good heat treatment. But the price is high, would not pay full price for them. I have video from couple years ago how I got 3 Wusthofs at their factory store for reasonable price. Need to try Victorinox and see how I like the handle, dont like it from picture so far. Maybe someone will bring it to me to sharpen...
@@knifeshopping What do you think about discontinued Wusthof Epicure Slate series which is sold cheaper? There is also discontinued series Wusthof Grand Prix which is also sold for reasonable prices.
@@proudbacteria1373 I have a video on few Wusthov knives where I show Epicure in good details, Slate would be a cheaper version with plastic handle. Interesting knife. Grand Prix is not for me, I don't like full bolster.
@@knifeshopping On German Amazon Wusthof Epicure Slate 16 mm chef was 42 euro recently without VAT. When you ship to USA they exclude VAT hence it gets cheaper and shipping cost is 18 euro to USA. So it would cost 60 euro with shipping. But this knife became out of stock just a few days ago while I was considering buying it.
Not rounding the spine keeps the cost lower. If someone rounded the spines for comfort, it would probably cost significantly more because its an additional step in the process.
Agree. The cost also will depend on how this is done, by hand or by robot. I've seen few knife factories and there is a lot of manual steps still even in big manufacturing plants which make inexpensive mass-market knives.
