    my boi! I havee both of these sink bridges. The kasfly puts the naniwa to shame. I utterly hate the naniwa bridge, nor would I ever recommend it. Such a pain in the ass to adjust. The kasfly is perfection

    Omg! You don't sharpen both sides of an ulu! It's a one-sided blade with the other side being flat! So you sharpen one side and then remove the burrs that develop on the other side! OY VEY

      The other side is to remove the burr, also like I said it's barely sharpened at an angle

    Jiro's are sooooo nice! So sick that he does it all in house, by himself, never cutting corners. That's special. Have a Jiro Sujihiki myself, but a Nakiri and/or Gyuto are on my bucket list.

      Either start on a Shapton Glass 120 or 220 , when I have time I'll do a video on the stone collection/sharpening and polishing setup

    Hi.. i am watching this video while writing this comment. I am impressed with your knife collection. Any reasons of why most of your knives are kurouchi? And i also want to know where do you get your saya sheaths. I've never seen it here in Australia. Could you share where you buy them?

      Thanks Daniel. Most of them were from Edro Made, or Chuboknives.com, a few were custom made by Ming Sayas or the Ginger Ninja

    What is the difference between supreme and the Aogami Super line? I assume they are the same.

      Yeah, a retailer has the Aogami Super series listed as Supreme, as opposed to the Aogami #2 as the Deluxe series
