Do you suggest that in a Statement of Claim, the damages have individual value per offense, or be listed as a singular sum for the total? (Case concerns discrimination, international terrorism, and human trafficking if that matters.)
The matters you have listed are criminal matters and typically we don't speak of damages in that context. A Statement of Claim is only filed in a civil case, in criminal cases Charges are filed.

Do you have to have a statement of claim with your suit? If not does it mean automatic dismissal?
Yes, a statement of claim is part of the documents you must file in court when commencing an action by writ of summons. It contains the facts of your claim and the relief you're seeking from the court.

What if the Deed of Assignment doesn't need a recital
Then a recital will not be included. After the parties clause is drafted, you proceed to draft the testatum which is drafted thus: "THIS DEED WITNESSES AS FOLLOWS:"
