- Oil for frying
- 1 Bunch cilantro
- 4 Garlic cloves
- 1 Tbsp tomato paste
- 1 Lemon
- 1 Cup water
- 1 tsp paprika
- 1 tsp salt

Thank you so much for watching! I'm happy you enjoyed :) I don't have the recipe by weight, unfortunately. A lot of these traditional foods are made with a general "feel" for how much of an ingredient to add. I hope the rough measurements in the video were able to be of help!

I make this already just wanted to confirm I'm doing it right. lol I usually just soak the seeds and use a stick blender on them. Sometimes having to do it more than once. Subscribed :)

Thank you for your comment! For this recipe, no oil. This is the green schug I add to my Yemenite Chilbeh dip--You can find that Chilbeh recipe here: bit.ly/2Vy0Bju The dip goes great in the Yemenite soup! (Which you can find here: bit.ly/3m1L8TF) Sometimes I make a red schug though and to that one yes, I do add oil. Enjoy! :)

Kol hakavod, taim meod^^ How about a video about preparing yachnoon/malawach (yemenite flaky bread cooked/fried)? Had them regularly (with egg, cheese, grated tomatoes or Matbucha and zhoug yarok) while stayin' in Tel Aviv, memories still have me salivating.;o)
Thank you for watching! Yachnoon and Malawach are delicious. I don't usually make them at home though so I probably won't have a video on them. But you can actually use this same Zalabia dough to make an amazing Kubaneh! :) Enjoy!

Since they aren't that well known in Germany (yet) and there's no frozen option, I'll have to learn to make them from scratch. Thx for the inspiration!

What's the make of the fenugreek powder do you use?
The fenugreek I use is not from a specific company. I personally buy pre-ground fenugreek seeds from a store in New York called Zion Kosher Market. Many Indian stores also sell fenugreek but it is often sold as whole seeds, which can then be ground at home using a coffee grinder.
My dad made schug when I was younger. He used to try get me to eat it but I would throw a tantrum. Now I love it.
50 years ago, when I was little I stayed with my gran and her mother. Gran was working, great- gran was baking. She would wake up before down and start mixing her dough. I remember her making liver- pies and filling 5 litre bucket full of pies, then giving them away to neighbours and passers-by. In the mornings she often made these fluffy breads. And let me tell you, since my early 20s I was trying to recreate her recipe. It is easy, water+yeast+ flour are main ingredients. No matter how many good and even wonderful recipes I tried, quick mixed and elaborately prepared, I could never tell:- this is it! You gifted me with more, then just recipe. Thank you from the bottom of my heart. This recipe must be very old, no one makes it like this now.

Do I have to soak overnight? What is min hours to soak? Can Hilbah be bought already made?
Thank you for the question! Overnight is ideal but if that's not possible then I'd say let it soak for at least three hours :) It's a lot easier to find the raw fenugreek Hilbeh seeds, but yes I bet you can also find already made Hilbeh in some stores. One I know of is called Zion Kosher Market, in Brooklyn New York. Good luck!
