there is nothing soapy about lauge 😅 it is acidic brine consisting mostly f natron (baking soda). the dough gets brined and this causes the surface to be etched natron is also used in the process of creating soap (here the fat gets converted by natron). anyhow - the brine used in creating the bread has nothing "soapy" about it

Bakers actually need to get a Giftschein (which translates into poison licence) to be allowed to bake it. It's poisonous when it's raw and looses it's toxicity after baking.

Let cool and mix into a dough with 250g flour 93g water 7g yeast 12g sugar 5g salt 12g butter Let the dough rest and rise for 2hours. Shape and let it rise for another 1hour. Egg wash and bake in a 200°C oven for 15minutes
