Your diagram of mechanical refrigeration is not right, the bottom part should be condensator whereas the upside part should be evaporator
the bottom part is an evaporator: inside the evaporator, the refrigerant evaporates (converts from liquid into gas) and this conversion requires energy. It takes heat from the drying air, which then cools down the air :)

Heat pump dryers essentially absorb air from outside. It is impossible to circulate the air inside the dryer through evaporator and condenser both.
Yes my friend. It is more complicate. The clip was just meant to explain the main difference between conventional hot air and heat-pump drying (in term of effects on food sensorial and quality) :)
