I have smoked a lot of trout. But I have never rubbed the trout with brown sugar after the cure and rinse. I have always wished it was a little sweeter, kind of a candy coating, I also have never dried the fish to the extent that you have! My favorite fishing spot is on a small stream and the fish are smaller 12/14 inches and less fatty, Brook And Rainbow! So tasty fried or smoked! I’m going to try your method and see how it turns out. Thank you for the recipe!

Using newspapers is an absolute NO NO!. The lead from the ink will go to the fish inevitably. Nice fish though.

Replace it now once it stops making that noise be worried. It’s a new oil pump balancer power head gasket along with a complete midsection gasket kit and oil pickup screen. And 8hrs at least at the dealers shop

peeps, if you are freaked out by the news paper don't use it.... put the trout in a plastic or ceramic container and cover it. what i like about this recipe is that it shows how simple this process is. so dont worry too mush about how much salt you need for how many kg. etc just keep the salt and sugar pretty even and go for it. add herbs and spices too. also that fish looked amazing!!!
