HOW DO YOU SWITCH TO COLOR ?
In the Ring app, under the doorbell setting (Device Settings), then Video Settings, there's an option to enable 'Color Night Vision'. This will use color where there is sufficient light in the image, and black and white infra-red elsewhere.

Anyway to remove or reduce the black dividing line?
Yes, you can opt to switch the view to picture-in-picture mode for both the dashboard view and the watch screen. These can be set separately as well. Additionally, if you turn the phone to landscape view you only get the main camera (top) showing.
