My name is Lukasz Luczaj (pronounce it: wookash woochuy). I am a forager and a wild food enthusiast. For years I have travelled the world making scientific documentation of the traditions of collecting wild foods. I like doing things - I run a large forest form, wild food workshops and I am a professor of biology at my university. I live in the Carpathian Mountains in South-Eastern Poland.

How much salt do you add when you ferment hogweed? If I don't add any salt, it's mud, and if I add as much as in the cabbage, the leaves are stiff. Have you ever tried to make sugar as Rostafiński writes?
I would suggert a flat spoonful per 3 l pot. I never made sugar but it was only done with stalks alone
@@luczaj100 Thanks. I will try it. And I'll try sugar too, we'll be mowing here, so I've got some stems too.
Which species do you eat? In the Czech Republic we have Petasites albus, hybridus and kablikianus. I have not found any data on the edibility of Petasites, except for your article on sarma. By the way, very interesting data, but Turkey is very interesting from the point of view of edible plants.

As it is an invasive weed, you might want to check your local laws. Though it can be found in most countries of the world now.
If you can identify the seeds/the plant, and live in or can drive to a rural area, you can get your own almost anywhere in the U.S. It's extremely invasive and grows everywhere because it was imported and widely planted. The iNaturalist app can help. Farmers who grow oats, wheat, and other grass grains hate it because rye brome supposedly infests their fields even after they spray it, although it is not resistant to glyphosate.

Very interesting. I am allowing Native grasses to return to my farm. Hoping to add in the wildflowers, especially those that can be eaten by livestock,, Silphium in particular and others as forbs and pollinators flowers. Ohio

I don't believe COMFREY is dangerous to injest. I grew up seeing my Elders drinking Comfrey Tea in the Island. They were the healthiest people.

My mom had that plant in Mexico when I was little. I used to open those seeds with my mouth as a little girl. Just for fun. I open many seed when they were green. I did not know they were toxic. They were very sticky. I don’t know why I did it jajaja

i have boreal blizzard, aurora, nimfa, vostorg, jugana and honeysuckle varieties and they taste ok i guess.. the main problem i have with them, is that even if they turn blue, they still arent fully ripe yet.

What a delightful video! Thank you for sharing it. I have never tried making something like this and I am confused by the directions. The video doesn't say what the liquid is already in the jar when you opened the jar and topped it off with water. Lemon juice, perhaps? Does it need to sit for a certain amount of time to ferment? I would be very appreciative if you would please write up the complete directions. I would love to try making this once the blossoms in my garden are blooming. I think I might need to increase the number of plants I have to make larger quantities in the future. Another question - Is it possible to make this using dried flower petals? Thank you for your help.
