Baked North Carolina Morehead Oysters
October is the beginning of Oyster Season!!
It’s such a joy whether you enjoy them raw, roasted or baked!! Here’s a lovely way to prepare them baked!! Enjoy!
Ingredients:
4 ounces unsalted butter, room temperature
1 cup cooked spinach, chopped
1/2 cup cooked bacon, diced
3 cloves garlic, minced
3/4 cup freshly grated Parmesan reggiano cheese
3 tablespoons fresh lemon juice
1/4 cup chives, chopped
1 tablespoon freshly chopped thyme
Salt/pepper
Rock salt for baking and serving
Bake at 450 degrees for 4-7 minutes

      @@MonicaMovieStar Hello! I have not tried to freeze the tart. I would suggest if you decide to try it, would be to reheat it frozen (do not defrost) at 350 or 375 until fully heated through. The tart will hold for at least two days refrigerated and then reheated in a 350 degree oven. Cheers!!

    My mother used to have an old-fashioned meat grinder -- the kind that fastened down to the edge of a counter and was driven by an hand crank. She made meat salads using that, Everything went through the grinder but the mayo and mustard. Ham was expensive, so she used bologna for meat, added sweet pickles, hard boiled eggs, cheese, and pimentos. It tasted good, was filling, and didn't cost a lot to make.

Our kitchen was small and bright with soft yellow walls and white curtains. She was always in the kitchen. I loved spending time With her in the kitchen - one could say I was attached to her apron strings!! She was an amazing cook - my love and passion for cooking, I definitely got from her!❤️
