What wz the flour and water for?
It's used as a paste to glue the tortilla together. Keeps it sealed so the filling won't come out as you fry

Just fold it before fully cooked, and then it over once to allow the omelette to fluff. Perhaps add two more eggs to equal out the vegetable ratio and use a bigger skillet to give you room to fold and form the eggs into an omelette. The veggie look good❤
