What a great thing to do, apply your skill set as a chef to the science of nutrition - it’s amazing how much knowledge we have yet our nutrition, especially in the United States has gotten worse overtime. you would think more people would take a scientific approach to their new nutrition to have a better quality of life.

I tried to leave a comment on your tru espresso machine review. I got the same machine, I'm a first-timer and think I've used the wrong coffee. So my husband bought me Lavazza espresso. I'm afraid the grind is too powdery. Do you have any recommendations for what brand of espresso I should be using? The very first cup I made came out perfect just like the one in your video. But now it's like it's not fully brewing. Could I have clogged a basket if so how do I fix it

I’m not sure, but your probe may be inserted too far. 212 sounds high for how good the fish looks. You might be getting interference on the reading from the pan. A probe thermometer like that one often takes the temperature at the very tip of the probe. So you’re aiming for that tip to be in the center of the thickest part (easier said than done with delicate fish). Looks like a great meal. Good job.
