Many who grew up in central Pennsylvania will understand that it’s just not Christmas without these crispy cut-out sugar cookies! These are a traditional Christmas treat in the region that includes and surrounds the Mennonite, Pennsylvania Dutch, and Amish communities.

    I think rerolling is necessary and not a bad thing to get the most out of the dough. I have done both add some new dough and just simply rerolling the scraps. Thanks for your video.

    It seperates because you've over cooked the mixture. Also make sure the thermometer doesn't touch the bottom of the pan. Because then you're taking the twmp of the pan not the mixture.

      I do think there's something to the length of time it takes to come up to temp... and I'm careful about the thermometer not hitting the bottom of the pan. I can also kind of tell now by how it looks and behaves when it's ready!

    To prevent it from seperating use more sugar than butter. I use 1 stick of butter to 1 cup of sugar. I also use 1 tablespoon of glucose syrup per cup of sugar. Havent had any batches seperate in years, decades actually lol Im in Florida and have made this during rain or shine or hurricane, humidity at 100% and never had problems with the toffee. Those must be old "wives tales" bcuz I make lots of candies and never had a problem...❤

    The true Pennsylvania Amish would not waste dough. My family always rerolled the dough over and over, adding a little new dough and cutting the shapes until there was no dough left, no difference in taste. We always sifted the flour and used baking powder. Also we only used black walnuts for the tops of the cookie.

      That's true - I usually do incorporate my scraps at least one time, maybe twice. And I remember black walnuts as a topping, and cinnamon/sugar!

      I hadn't considered that as a source of the issue but I do sometimes freeze butter - maybe previously frozen butter is more likely to cause separation?

    You're cooking it you're not supposed to cook it no more than 3 minutes once it starts boiling you cooked it way too long

      It has to come up to temp - this recipe requires that the sugar/toffee mixture reach the hard crack stage

    Stop stirring before it reaches the hard crack stage and it shouldn't separate. It works well to stir the almonds into the syrup.

    Regarding the separation. Someone on another video said… real butter will make it separate so he exclusively uses margarine instead.

    One other comment... I've been watching a lot of cooking shows on RUclips lately and it seems like all of the chefs are using parchment paper now. You can even buy it in sheets pre-cut to fit cookie sheet pans instead of aluminum foil. Just thought I'd pass this on...

      YES, that one is great! Or Matzoh! For that recipe, you don't cook the toffee mixture the whole way to "hard crack" - it comes out before that, then you pour it over the crackers and then it goes into the oven.

    You made my mouth water💖. Our family made peanut brittle using salted peanuts and added 1 tsp soda. We would take it immediately outside and carefully sit the pan on a leveled snow drift. Then the giggling would start like young girls when it would start cracking and warp. Beautiful Christmas Memories 🎄🙏💖

    My gosh. This is soooo delicious! I made it exactly as said and I’ve made 3 batches this year. I have an induction stovetop and the highest level is 8, so I cooked it right through on 4. I have a candy thermometer and t’s a great gadget to have! Thank you for sharing Sara!

    My family recipe calls for 2lbs flour, 4 cups light brown sugar, 1lb butter, and 3 eggs plus the egg wash. Cook at 350 for 6 minutes. I think it’s so interesting how much sand tart cookie recipes vary.
